Sausage & Pepper Pasta

Ingredients

  • 10 oz. Italian sausage (hot, sweet, or mild)
  • 1 Tbsp vegetable oil
  • 2 count green bell peppers
  • 1 count red bell pepper
  • 1 count yellow bell pepper
  • 1 count yellow onion
  • 2 cloves garlic
  • 1 28oz. can petite diced tomatoes
  • ½ Tbsp dried basil
  • ½ Tbsp dried oregano
  • ¼ tsp crushed red pepper (optional)
  • 1 tsp salt or to taste
  • ¾ lb. pasta (rigatoni or your favorite shape)

Instructions

  1. Heat vegetable oil in a large pot and cook the sausage links until browned.
  2. While the sausage cooks, slice the bell peppers and onion, and mince the garlic.
  3. Remove the sausage from the pot and add the peppers, onions, and garlic. Cook until softened.
  4. Slice the sausage into thin medallions and return to the pot.
  5. Add the diced tomatoes, basil, oregano, and crushed red pepper to the pot and stir.
  6. Boil water in a separate pot and cook the pasta until just tender.
  7. Drain the pasta and add it to the pot with the sausage and peppers. Stir to combine.
  8. Cover and let it cook for about 5 minutes to absorb the liquid and flavors. Adjust salt to taste.
