pasta (rigatoni or your favorite shape)
Instructions
- Heat vegetable oil in a large pot and cook the sausage links until browned.
- While the sausage cooks, slice the bell peppers and onion, and mince the garlic.
- Remove the sausage from the pot and add the peppers, onions, and garlic. Cook until softened.
- Slice the sausage into thin medallions and return to the pot.
- Add the diced tomatoes, basil, oregano, and crushed red pepper to the pot and stir.
- Boil water in a separate pot and cook the pasta until just tender.
- Drain the pasta and add it to the pot with the sausage and peppers. Stir to combine.
- Cover and let it cook for about 5 minutes to absorb the liquid and flavors. Adjust salt to taste.
