Ingredients

The pasta

  • 12 ounces whole grain shaped pasta
  • ¼ cup pasta water

The sausage and vegetables

  • 1 pound ground Italian sausage
  • 2 medium bell peppers
  • 4 cups fresh baby spinach
  • 3 cloves garlic

Seasonings

  • 1 ½ tablespoons Cajun seasoning
  • 1 tablespoon Italian seasoning
  • ¾ teaspoon coarse salt
  • ½ teaspoon ground black pepper

Finishing touches

  • 2 tablespoons olive oil
  • ¼ cup freshly grated Parmesan cheese
  • 1 handful fresh flat-leaf Italian parsley

Instructions

  1. 1. Bring a large pot of water to a boil and cook the pasta according to package directions, reserving ¼ cup of pasta water before draining.
  2. 2. In a large skillet, cook the Italian sausage until lightly browned, breaking it into pieces.
  3. 3. Add olive oil, bell peppers, and spinach to the skillet, cooking until the spinach is wilted.
  4. 4. Stir in garlic and the Cajun and Italian seasonings.
  5. 5. Add the reserved pasta water and pasta to the skillet, seasoning with salt and black pepper, and stir to combine.
  6. 6. Simmer until the liquid has absorbed, stirring constantly.
  7. 7. Serve in bowls topped with Parmesan cheese and chopped parsley.
