Instructions
- 1. Bring a large pot of water to a boil and cook the pasta according to package directions, reserving ¼ cup of pasta water before draining.
- 2. In a large skillet, cook the Italian sausage until lightly browned, breaking it into pieces.
- 3. Add olive oil, bell peppers, and spinach to the skillet, cooking until the spinach is wilted.
- 4. Stir in garlic and the Cajun and Italian seasonings.
- 5. Add the reserved pasta water and pasta to the skillet, seasoning with salt and black pepper, and stir to combine.
- 6. Simmer until the liquid has absorbed, stirring constantly.
- 7. Serve in bowls topped with Parmesan cheese and chopped parsley.
