Ingredients

The pasta

  • 8 ounces pasta (trottole)
  • cups water
  • 1 15-ounce can diced tomatoes

The sauce

  • 2 cups 1% milk
  • 3 ounces low-fat cream cheese
  • 1 teaspoon Cajun or Creole seasoning
  • ½ teaspoon smoked paprika
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 1 cup freshly grated Parmesan cheese

The vegetables and sausage

  • ½ pound smoked pork sausage
  • 1 small red onion
  • 3-4 cloves garlic (minced)
  • 2 colored bell peppers red and yellow (halved and sliced)

The seasonings

  • 1 teaspoon extra-virgin olive oil
  • 1 teaspoon minced garlic

Instructions

  1. 1. Heat olive oil in a large skillet over medium-high heat and cook the sausage until browned.
  2. 2. Add onions, garlic, and bell peppers, cooking until the peppers are tender-crisp.
  3. 3. Remove sausage and peppers from the skillet and set aside.
  4. 4. In the same pan, add tomatoes and water, bring to a boil, then add pasta and cover, cooking until al dente.
  5. 5. Blend milk, cream cheese, Cajun seasoning, smoked paprika, and flour until smooth.
  6. 6. In a saucepan, melt butter, add garlic, and cook until fragrant.
  7. 7. Add the blended mixture to the saucepan and cook until thickened.
  8. 8. Stir in Parmesan cheese until melted and smooth.
  9. 9. Combine sausage and peppers with the pasta and sauce, mixing well before serving.
