Ingredients

The spices

  • 1 ½ teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • ¾ teaspoon dried oregano
  • ¾ teaspoon dried thyme
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon ground cayenne pepper

The protein and vegetables

  • 1 lb raw boneless skinless chicken breasts, cut into small bite-sized pieces
  • 1 ½ tablespoons olive oil
  • 1 rope (13 oz) turkey smoked sausage, sliced
  • 1 medium yellow onion, diced

The liquids and pasta

  • 2 ¾ cups reduced sodium chicken broth
  • 1 can (15 oz) fire-roasted diced tomatoes
  • 12 oz dry pasta (such as penne, campanelle, farfalle or rotini)

The creamy element

  • 2 oz 1/3 less fat cream cheese, cut into cubes

Optional garnish

  • 2 medium scallions, sliced

Instructions

  1. 1. Combine the spices in a small dish to create a Cajun spice mix and coat the chicken pieces with it.
  2. 2. Heat olive oil in a pot over medium-high heat and cook the chicken until browned.
  3. 3. Add the sausage and onion, cooking until the onion is softened.
  4. 4. Stir in the broth, fire-roasted tomatoes, and pasta, then cover and bring to a boil.
  5. 5. Once boiling, reduce heat and simmer uncovered until the pasta is cooked and the liquid thickens.
  6. 6. Stir in the cream cheese until melted, then let sit for 5 minutes before serving.
