Cajun Chicken Pasta

Ingredients

  • 3 Tbsp. olive oil
  • 2 pieces boneless skinless chicken breasts, sliced thin
  • 2 ½ Tbsp. Cajun seasoning, divided
  • 3 small bell peppers, cored and thinly sliced
  • 3 pieces roma tomatoes, diced
  • 1 medium red onion, peeled and thinly sliced
  • 3 cloves garlic, minced
  • 1 Tbsp. butter
  • 1 Tbsp. flour
  • ½ cup dry white wine
  • 1 cup chicken stock
  • ½ cup heavy cream
  • pinch cayenne pepper
  • 12 oz. dried pasta of your choice
  • Parmesan cheese, for garnish
  • green onions, for garnish

Instructions

  1. Heat 2 tablespoons of olive oil in a skillet and sauté the chicken with 1 tablespoon of Cajun seasoning until cooked through.
  2. Remove the chicken and set aside, then add more oil and sauté the bell peppers, tomatoes, and onion for about 5 minutes.
  3. Add garlic and continue to sauté until the vegetables start to brown.
  4. Prepare the pasta in boiling water according to package instructions.
  5. In the same skillet, make a roux with butter and flour, then add white wine and scrape the bottom for flavor.
  6. Let the wine reduce, then add chicken stock and simmer for 5 minutes.
  7. Stir in cream, cayenne, and remaining Cajun seasoning, adjusting seasoning as needed.
  8. Combine the cooked pasta, chicken, and vegetables with the sauce, and serve garnished with Parmesan and green onions.
