Cajun Chicken Pasta

Instructions
- Heat 2 tablespoons of olive oil in a skillet and sauté the chicken with 1 tablespoon of Cajun seasoning until cooked through.
- Remove the chicken and set aside, then add more oil and sauté the bell peppers, tomatoes, and onion for about 5 minutes.
- Add garlic and continue to sauté until the vegetables start to brown.
- Prepare the pasta in boiling water according to package instructions.
- In the same skillet, make a roux with butter and flour, then add white wine and scrape the bottom for flavor.
- Let the wine reduce, then add chicken stock and simmer for 5 minutes.
- Stir in cream, cayenne, and remaining Cajun seasoning, adjusting seasoning as needed.
- Combine the cooked pasta, chicken, and vegetables with the sauce, and serve garnished with Parmesan and green onions.
