One Pot Cajun Chicken Pasta

Instructions
- Heat olive oil in a large pot over medium-high heat.
- Season chicken with cajun seasoning and add to the pot in a single layer.
- Cook chicken until browned and cooked through, then transfer to foil to keep warm.
- In the same pot, heat remaining olive oil and sauté bell peppers and onion for 3 minutes.
- Add garlic and remaining cajun seasoning, sauté for another minute.
- Pour in chicken broth, diced tomatoes, and half a cup of heavy cream, then bring to a boil.
- Add the penne pasta and cook until nearly tender, about 12-13 minutes.
- Mix cornstarch with water, add to the pot, and cook until the sauce thickens.
- Remove from heat and stir in remaining cream, parmesan, parsley, and cooked chicken, seasoning to taste.
