Instructions
- Prepare all ingredients by chopping vegetables and slicing sausage.
- Activate the Sauté function on the Instant Pot and heat oil and butter.
- Add sausage and chicken breast, cooking for 3 to 4 minutes while stirring.
- Incorporate onion and celery, cooking until the onion is translucent.
- Add garlic, Cajun seasoning, smoked paprika, and mushrooms, cooking for 1 minute.
- Stir in red bell pepper and chicken broth, bringing to a simmer.
- Add the penne pasta ensuring it is submerged, then secure the lid and set the steam release knob to Sealing.
- Cancel the Sauté function and select Pressure Cook/Manual for 5 minutes.
- After cooking, turn off the pot and perform a Quick Release of the pressure.
- Once the lid can be opened, stir the pasta.
- Mix in Parmesan cheese and let it melt.
- Add heavy cream and parsley, then let sit uncovered for a few minutes to thicken.
