Instant Pot Creamy Cajun Pasta with Sausage

Ingredients

  • 1 Tbsp Olive Oil
  • 1 Tbsp Butter
  • 1 lb Andouille Sausage (or Smoked Kielbasa), sliced in ½" rounds
  • 1 Chicken Breast skinless/boneless, cubed
  • 1 small Sweet Onion, chopped
  • ½ cup Celery, diced
  • 4 cloves Garlic, pressed or minced
  • 1 ½ Tbsp Cajun Seasoning Blend
  • 1 Tbsp Smoked Paprika
  • 8 med Mushrooms, sliced (optional)
  • 1 Red Bell Pepper, chopped
  • 4 cups Chicken Broth, low sodium
  • 12 to 16 oz Penne Pasta
  • 1 cup Parmesan Cheese, grated
  • 1 cup Heavy Cream
  • ¼ cup Fresh Flat Leaf Parsley, chopped

Instructions

  1. Prepare all ingredients by chopping vegetables and slicing sausage.
  2. Activate the Sauté function on the Instant Pot and heat oil and butter.
  3. Add sausage and chicken breast, cooking for 3 to 4 minutes while stirring.
  4. Incorporate onion and celery, cooking until the onion is translucent.
  5. Add garlic, Cajun seasoning, smoked paprika, and mushrooms, cooking for 1 minute.
  6. Stir in red bell pepper and chicken broth, bringing to a simmer.
  7. Add the penne pasta ensuring it is submerged, then secure the lid and set the steam release knob to Sealing.
  8. Cancel the Sauté function and select Pressure Cook/Manual for 5 minutes.
  9. After cooking, turn off the pot and perform a Quick Release of the pressure.
  10. Once the lid can be opened, stir the pasta.
  11. Mix in Parmesan cheese and let it melt.
  12. Add heavy cream and parsley, then let sit uncovered for a few minutes to thicken.
