Ingredients

The main ingredients

  • 1 Tbsp Olive Oil
  • 1 Tbsp Butter
  • 2-3 pieces Chicken Breasts (boneless/skinless)
  • 1 tsp Dried Basil
  • ½ tsp Garlic Powder
  • 1 ¼ cups Chicken Broth, low sodium
  • 3 cloves Garlic, pressed or finely minced
  • 1 tsp Smoked Paprika
  • 3 tsp Cajun Seasoning (or Creole, if preferred)
  • ⅛-1/4 tsp Cayenne Pepper

To thicken

  • 3 Tbsp Flour
  • 3 Tbsp Unsalted Butter, softened, almost melted

To finish

  • 1 cup Heavy Cream
  • ½ cup Roasted Red Peppers, chopped

Garnish

  • cup Grated Parmesan Cheese
  • to taste Fresh Basil Leaves

Instructions

  1. 1. Heat olive oil and butter in the Instant Pot using the Sauté setting.
  2. 2. Brown the chicken breasts on both sides, then remove and set aside.
  3. 3. Deglaze the pot with chicken broth, scraping the bottom to remove browned bits.
  4. 4. Add garlic, smoked paprika, Cajun seasoning, and cayenne pepper to the pot.
  5. 5. Return the chicken to the pot, cancel the Sauté setting, and seal the lid.
  6. 6. Pressure cook on high for 6 minutes, then allow a 5-minute natural release.
  7. 7. Remove the chicken and set aside, then mix softened butter and flour.
  8. 8. Simmer the sauce, whisk in the butter/flour mixture until thickened.
  9. 9. Stir in heavy cream and roasted red peppers.
  10. 10. Slice the chicken and return it to the sauce, garnish, and serve.
