Instructions
- 1. Heat olive oil and butter in the Instant Pot using the Sauté setting.
- 2. Brown the chicken breasts on both sides, then remove and set aside.
- 3. Deglaze the pot with chicken broth, scraping the bottom to remove browned bits.
- 4. Add garlic, smoked paprika, Cajun seasoning, and cayenne pepper to the pot.
- 5. Return the chicken to the pot, cancel the Sauté setting, and seal the lid.
- 6. Pressure cook on high for 6 minutes, then allow a 5-minute natural release.
- 7. Remove the chicken and set aside, then mix softened butter and flour.
- 8. Simmer the sauce, whisk in the butter/flour mixture until thickened.
- 9. Stir in heavy cream and roasted red peppers.
- 10. Slice the chicken and return it to the sauce, garnish, and serve.
