Instructions
- Preheat the oven to 400°F (204°C).
- Pat the chicken breasts dry and season both sides with Cajun seasoning.
- Heat olive oil in an oven-safe pan over medium-high heat and sear the chicken for 5 minutes per side.
- Transfer the pan to the oven and bake until the internal temperature reaches 165°F (74°C).
- Remove the chicken and cover to keep warm.
- In the same pan, melt the butter over medium-high heat.
- Add garlic and sauté until fragrant, about 30 seconds.
- Add diced tomatoes and chicken broth, scraping any browned bits from the bottom. Bring to a boil, then reduce to simmer for 5 minutes.
- Stir in heavy cream and simmer for an additional 5 minutes until the sauce thickens.
- Add cream cheese and stir until melted, adjusting thickness as desired.
- Stir in lime juice and season with salt and pepper to taste.
- Return the chicken to the pan and spoon the sauce over it. Garnish with lime wedges and cilantro.
