Cajun Chicken

Ingredients

The Chicken

  • 4 pieces Boneless skinless chicken breasts
  • 1 ½ tbsp Cajun seasoning

The Sauce

  • 1 tbsp Olive oil
  • 1 tbsp Unsalted butter
  • 3 cloves Garlic (minced)
  • 1 14.5-oz can Diced tomatoes
  • ½ cup Chicken broth (reduced sodium)
  • ¾ cup Heavy cream
  • 4 oz Cream cheese (softened)
  • 1 tbsp Lime juice
  • 1 tsp Sea salt (to taste)
  • ½ tsp Black pepper (to taste)

Garnishes

  • as needed none Lime wedges (optional)
  • as needed none Fresh cilantro (optional)

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Pat the chicken breasts dry and season both sides with Cajun seasoning.
  3. Heat olive oil in an oven-safe pan over medium-high heat and sear the chicken for 5 minutes per side.
  4. Transfer the pan to the oven and bake until the internal temperature reaches 165°F (74°C).
  5. Remove the chicken and cover to keep warm.
  6. In the same pan, melt the butter over medium-high heat.
  7. Add garlic and sauté until fragrant, about 30 seconds.
  8. Add diced tomatoes and chicken broth, scraping any browned bits from the bottom. Bring to a boil, then reduce to simmer for 5 minutes.
  9. Stir in heavy cream and simmer for an additional 5 minutes until the sauce thickens.
  10. Add cream cheese and stir until melted, adjusting thickness as desired.
  11. Stir in lime juice and season with salt and pepper to taste.
  12. Return the chicken to the pan and spoon the sauce over it. Garnish with lime wedges and cilantro.
