Ingredients

The main ingredients

  • 1 lb Italian Sausage
  • ½ unit Onion, diced
  • 1 ½ teaspoon Italian Seasoning
  • ½ teaspoon Oregano
  • 2 teaspoons Garlic Powder
  • ¼ - ½ teaspoon Red Pepper Flakes
  • ½ teaspoon Kosher Salt
  • ¼ teaspoon Pepper
  • 1 unit Red Bell Pepper, chopped (optional)
  • 6 oz Mushrooms, sliced (optional)
  • 4 cups Low Sodium Chicken Broth
  • 16 oz Rotini
  • 24 oz Marinara Sauce
  • 8 oz Mozzarella Cheese, shredded
  • 5 oz Pepperoni Slices

Optional Add-Ins

  • ½ cup Sliced Black Olives
  • ½ cup Cooked Bacon Pieces
  • ½ cup Pineapple Chunks

Instructions

  1. Set the Instant Pot to the Sauté setting and cook the sausage and onion until the meat is cooked through.
  2. Add Italian seasoning, oregano, garlic powder, red pepper flakes, salt, pepper, bell pepper, and mushrooms, if using, and stir.
  3. Add the broth or water and stir, scraping the bottom of the pot to deglaze.
  4. Layer the pasta evenly over the mixture without stirring.
  5. Pour the marinara sauce over the pasta, covering it completely without stirring.
  6. Cancel the Sauté function, seal the lid, and set the pressure cook time to 4 minutes.
  7. After cooking, do a Quick Release of the pressure.
  8. Once the lid is open, stir in half of the cheese and ¾ of the pepperoni.
  9. Add any optional ingredients like olives, if desired.
  10. Sprinkle the remaining cheese and arrange the remaining pepperoni on top, then close the lid to melt the cheese.
  11. Serve directly from the pot or transfer to a serving dish.
