Ingredients

The pasta

  • 16 oz pasta

The vegetables

  • 2 tbsp avocado oil
  • ½ unit yellow onion, diced
  • 3 cloves garlic, minced
  • 1 unit green pepper, diced
  • 4 cups broccoli, chopped

The protein

  • 1.5 lbs chicken sausage, uncooked and in casing

The seasonings

  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp salt

The liquids

  • 1 15 oz can diced tomatoes
  • 4 cups pasta sauce

The toppings

  • 3 oz pepperoni
  • 1-2 cups shredded mozzarella

Instructions

  1. Preheat the oven to 350°F and grease a 9×13 glass baking dish.
  2. Cook the pasta according to the package instructions, then drain and set aside.
  3. In a dutch oven, heat the avocado oil and sauté the onion, garlic, green pepper, and broccoli for about 5 minutes.
  4. Remove the sausage from its casing and add it to the sautéed vegetables, cooking until fully done.
  5. Stir in the oregano, basil, salt, diced tomatoes, and pasta sauce until combined.
  6. Add the cooked pasta to the mixture and stir until everything is well mixed.
  7. Pour the mixture into the baking dish, layer with pepperoni, and top with mozzarella cheese.
  8. Bake uncovered for 25 minutes, then let cool for 10 minutes before serving.
