Spaghetti Pizza Casserole

Ingredients

The casserole

  • 1 medium spaghetti squash
  • lbs ground beef (can sub Italian Sausage)
  • 1 tbsp Italian seasoning (omit if using Italian Sausage)
  • 1 medium onion, diced
  • 6 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 10 leaves fresh basil, diced
  • 1 can olives, diced (15 oz)
  • 1 jar spaghetti sauce (25 oz)
  • 2 large eggs (optional)
  • 5 oz pepperoni slices

Optional toppings

  • to taste chopped red onion
  • to taste chopped basil

Instructions

  1. Preheat the oven to 425°F.
  2. Slice the spaghetti squash lengthwise and scoop out the seeds. Place the halves face-down on a baking dish and bake for 25 minutes.
  3. While the squash is cooking, chop the other ingredients.
  4. In a large skillet, heat over medium heat and cook the ground beef and onion until browned. Season with Italian seasoning, salt, and pepper.
  5. Remove the squash from the oven and lower the temperature to 350°F. Allow the squash to cool for about 5 minutes.
  6. Scrape out the spaghetti squash into a large bowl.
  7. Add the cooked beef, garlic, mushrooms, basil, olives, spaghetti sauce, and eggs (if using) to the bowl and mix well.
  8. Layer half of the mixture in a 9x13 casserole dish, then top with half of the pepperoni.
  9. Spread the remaining mixture on top and finish with the remaining pepperoni.
  10. Bake in the oven for 30 minutes. Remove and add optional toppings as desired before serving.
