Ingredients

The main ingredients

  • 1 medium spaghetti squash
  • 1 Tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 lb lean ground beef or ground turkey
  • 1 Tbsp Italian seasoning
  • to taste salt and pepper
  • 2 cups favorite marinara
  • cups shredded mozzarella cheese
  • 15 to 20 pepperonis

Optional toppings

  • to taste fresh basil
  • to taste fresh parsley
  • to taste red pepper flakes

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the spaghetti squash in half lengthwise, scoop out the seeds, brush with olive oil, and sprinkle with salt and pepper. Place cut side down on a baking sheet and bake for 35 to 40 minutes.
  3. While the squash is roasting, sauté the onion and garlic in a large skillet with olive oil for about 2 minutes. Add ground beef and cook until browned. Drain if necessary.
  4. Stir in the Italian seasoning, salt, and pepper, then pour in the marinara sauce and mix well. Bring to a boil, then reduce heat and simmer for about 10 minutes.
  5. Remove the squash from the oven, let cool slightly, then scrape out the insides with a fork and add to the sauce. Toss and cook for about 3 minutes.
  6. Transfer the mixture to a 9x13 casserole dish coated with nonstick spray. Top with mozzarella cheese, arrange pepperonis, and sprinkle with additional seasoning and red pepper flakes if desired.
  7. Bake uncovered for about 25 minutes until hot and bubbly. Serve and enjoy!
