Spaghetti Squash Pizza Casserole

Instructions
- Preheat the oven to 375°F.
- Cut the spaghetti squash in half lengthwise, scoop out the seeds, brush with olive oil, and sprinkle with salt and pepper. Place cut side down on a baking sheet and bake for 35 to 40 minutes.
- While the squash is roasting, sauté the onion and garlic in a large skillet with olive oil for about 2 minutes. Add ground beef and cook until browned. Drain if necessary.
- Stir in the Italian seasoning, salt, and pepper, then pour in the marinara sauce and mix well. Bring to a boil, then reduce heat and simmer for about 10 minutes.
- Remove the squash from the oven, let cool slightly, then scrape out the insides with a fork and add to the sauce. Toss and cook for about 3 minutes.
- Transfer the mixture to a 9x13 casserole dish coated with nonstick spray. Top with mozzarella cheese, arrange pepperonis, and sprinkle with additional seasoning and red pepper flakes if desired.
- Bake uncovered for about 25 minutes until hot and bubbly. Serve and enjoy!
