Spaghetti Squash Pizza Bowls

Ingredients

The squash

  • 2 medium-to-large spaghetti squash

The filling

  • 4 teaspoons extra-virgin olive oil
  • 1 tablespoon extra-virgin olive oil
  • 4 medium cloves garlic
  • 6 ounces baby spinach
  • cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 8 ounces grated part-skim mozzarella cheese
  • 1 pinch red pepper flakes
  • 1 bunch chopped fresh basil

Seasoning

  • to taste salt
  • to taste freshly ground black pepper

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with parchment paper.
  2. Cut the spaghetti squashes in half and scoop out the seeds.
  3. Drizzle the insides with olive oil and season with salt and pepper, then place cut-side down on the baking sheet.
  4. Bake for 40 to 60 minutes until tender.
  5. In a skillet, heat olive oil and sauté garlic until fragrant, then add spinach and cook until wilted.
  6. Once the squash is done, fluff the insides with a fork and mix in the spinach and Parmesan.
  7. Top each squash half with marinara sauce and mozzarella, then return to the oven and bake for 20 minutes until cheese is golden.
  8. Garnish with fresh basil and red pepper flakes before serving.
