Spaghetti Squash Pizza Bowls

Instructions
- Preheat the oven to 400°F and prepare a baking sheet with parchment paper.
- Cut the spaghetti squashes in half and scoop out the seeds.
- Drizzle the insides with olive oil and season with salt and pepper, then place cut-side down on the baking sheet.
- Bake for 40 to 60 minutes until tender.
- In a skillet, heat olive oil and sauté garlic until fragrant, then add spinach and cook until wilted.
- Once the squash is done, fluff the insides with a fork and mix in the spinach and Parmesan.
- Top each squash half with marinara sauce and mozzarella, then return to the oven and bake for 20 minutes until cheese is golden.
- Garnish with fresh basil and red pepper flakes before serving.
