Pizza Spaghetti Squash Boats

favorite pizza toppings (e.g., pepperoni, diced green peppers, thinly-sliced red onions, crushed red pepper flakes)
Instructions
- Preheat the oven to 400°F and prepare a baking sheet with aluminum foil and cooking spray.
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Brush the inside of the squash with olive oil and season with salt and pepper, then place cut-side down on the baking sheet.
- Bake for 30-35 minutes until the squash is tender and can be shredded easily.
- Once cool, shred the inside of the squash into spaghetti-like strands.
- Mix in pizza sauce and some mozzarella cheese until well combined.
- Add your preferred pizza toppings and more mozzarella cheese on top.
- Broil in the oven for 4-6 minutes until the cheese is melted and golden.
- Serve immediately.
