Cheeseburger Casserole With Spaghetti Squash

Ingredients

  • 1 large spaghetti squash, cooked
  • 1 tbsp olive oil
  • ½ yellow onion diced
  • 1 lb ground turkey (93/7)
  • 1 tsp salt
  • ½ tsp pepper
  • 2 cloves garlic, minced
  • ½ cup ketchup
  • ¼ cup mustard
  • ¼ cup nonfat plain Greek yogurt
  • ½ cup chopped pickles
  • 1 cup lite cheddar cheese
  • 3 large eggs

Instructions

  1. 1. Preheat the oven to 400°F and grease a 9x9 baking dish.
  2. 2. Cook the spaghetti squash using your preferred method and scoop out the strands into a large bowl.
  3. 3. In a sauté pan, heat olive oil and cook the diced onion for about 2 minutes.
  4. 4. Add ground turkey, salt, pepper, and minced garlic to the pan and cook until the turkey is no longer pink.
  5. 5. Turn off the heat and add the turkey mixture to the bowl with spaghetti squash.
  6. 6. In a small bowl, mix together ketchup, mustard, Greek yogurt, and pickles, then pour this mixture into the spaghetti squash and turkey bowl.
  7. 7. Whisk the eggs in the leftover sauce bowl and add them to the spaghetti squash mixture.
  8. 8. Stir in half of the cheddar cheese and mix everything well.
  9. 9. Pour the mixture into the greased baking dish and top with the remaining cheddar cheese.
  10. 10. Bake for 1 hour and let cool for 15 minutes before serving.
