Cheeseburger Casserole With Spaghetti Squash

Instructions
- 1. Preheat the oven to 400°F and grease a 9x9 baking dish.
- 2. Cook the spaghetti squash using your preferred method and scoop out the strands into a large bowl.
- 3. In a sauté pan, heat olive oil and cook the diced onion for about 2 minutes.
- 4. Add ground turkey, salt, pepper, and minced garlic to the pan and cook until the turkey is no longer pink.
- 5. Turn off the heat and add the turkey mixture to the bowl with spaghetti squash.
- 6. In a small bowl, mix together ketchup, mustard, Greek yogurt, and pickles, then pour this mixture into the spaghetti squash and turkey bowl.
- 7. Whisk the eggs in the leftover sauce bowl and add them to the spaghetti squash mixture.
- 8. Stir in half of the cheddar cheese and mix everything well.
- 9. Pour the mixture into the greased baking dish and top with the remaining cheddar cheese.
- 10. Bake for 1 hour and let cool for 15 minutes before serving.
