Pasta with Sausage and Peppers

Ingredients

  • 2 links Italian sausage
  • 1 Tbsp cooking oil
  • 1 red bell pepper
  • 1 yellow onion
  • 1 24oz. jar pasta sauce
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • ¼ tsp crushed red pepper
  • ½ lb. penne pasta
  • 1 oz. feta, crumbled
  • 1 Tbsp chopped parsley (optional)

Instructions

  1. Heat oil in a skillet and cook the sausage links until browned.
  2. Remove sausage, slice into medallions, and return to skillet to cook through.
  3. Slice bell pepper and onion, then add to skillet and cook until slightly softened.
  4. Add sausage back to skillet with pasta sauce, basil, oregano, and red pepper, and heat through.
  5. Boil water for pasta, cook penne until tender, then drain.
  6. Combine pasta with sauce in the skillet, and top with feta and parsley before serving.
