Sausage and Spinach Pasta

Ingredients

The pasta

  • 16 ounces ziti pasta
  • 12 ounces pasta sauce

The protein

  • 1 mild Italian Sausage

The vegetables

  • 4 cups fresh spinach
  • ½ teaspoon crushed red pepper

For serving

  • basil
  • Parmesan cheese

Instructions

  1. Cook the sausage over medium-high heat for 5 minutes, turning often.
  2. Add ½ cup of water to the pan, reduce heat to medium-low, and cover. Cook for 12 minutes.
  3. Remove the sausage from the pan and add the spinach, seasoning with salt, pepper, and crushed red pepper. Cook until wilted, about 3 minutes.
  4. Remove the spinach from the pan and slice the sausage into rounds and chop the spinach finely.
  5. Meanwhile, cook the ziti in boiling salted water for 10 minutes, then drain.
  6. Toss the ziti with 1 cup of pasta sauce and the sausage.
  7. Garnish with basil and Parmesan cheese, and drizzle with more sauce if desired.
