Ingredients

The pasta

  • 12 oz uncooked pasta

The sausage

  • 1 ½ lbs uncooked hot Italian poultry sausage

The vegetables

  • 2 cloves garlic
  • 4 cups chopped fresh spinach leaves
  • 1 cup frozen peas
  • 2 tablespoons chopped basil
  • ½ teaspoon crushed red pepper flakes
  • ¼ teaspoon black pepper

The sauce

  • 3 tablespoons lemon juice
  • 1 cup fat free ricotta cheese

Instructions

  1. Cook the pasta according to package directions and drain.
  2. In a large skillet, cook the sausage over medium heat, breaking it up until fully cooked.
  3. Add minced garlic to the skillet and cook for an additional minute.
  4. Stir in the spinach, peas, basil, and pepper, cooking until the spinach wilts and peas are warm.
  5. Combine the cooked pasta with the sausage mixture.
  6. Add lemon juice and ricotta cheese, stirring until well mixed.
