Instructions
- Heat olive oil in a large dutch oven or sauté pan over medium heat.
- Add onions and sausage, cooking until browned and onions are tender.
- Stir in garlic and cook until fragrant.
- Add broth, Ro-Tel, half and half, salt, and pepper, mixing well.
- Stir in uncooked pasta, ensuring it is covered by the liquid.
- Cover and bring to a boil, then reduce heat and simmer until pasta is cooked.
- Preheat oven to broil and mix half of the shredded cheese into the pasta.
- Transfer to a baking dish if necessary, sprinkle remaining cheese and scallions on top.
- Broil until cheese is melted and beginning to brown.
