Spicy Whole Wheat Linguini with Sausage and Roasted Peppers

Instructions
- 1. Cook the sausage in a large skillet over medium heat until browned, breaking it up as it cooks, then set aside.
- 2. In the same skillet, add olive oil, onions, roasted peppers, garlic, kosher salt, and black pepper, cooking until golden for about 4 to 5 minutes.
- 3. Add the crushed tomatoes and chicken broth to the skillet, then return the sausage and bring to a boil.
- 4. Reduce heat and let it simmer on low for 15 minutes.
- 5. Meanwhile, cook the linguini in salted water according to package directions, then drain.
- 6. Toss the cooked pasta with the sauce and Pecorino cheese, cooking and stirring on low for about 2 minutes.
- 7. Finish with chopped parsley and serve with extra cheese if desired.
