Ingredients

  • 14 oz hot Italian chicken sausage
  • 1 teaspoon olive oil
  • cup chopped onion
  • 12 oz jar roasted peppers in water, diced
  • 3 cloves garlic, smashed
  • kosher salt and black pepper
  • 1 ½ cups crushed tomatoes
  • ½ cup low-sodium chicken broth
  • 9 oz DeLallo whole wheat linguini
  • 2 tablespoons grated Pecorino Romano
  • 1 tablespoon fresh chopped parsley

Instructions

  1. 1. Cook the sausage in a large skillet over medium heat until browned, breaking it up as it cooks, then set aside.
  2. 2. In the same skillet, add olive oil, onions, roasted peppers, garlic, kosher salt, and black pepper, cooking until golden for about 4 to 5 minutes.
  3. 3. Add the crushed tomatoes and chicken broth to the skillet, then return the sausage and bring to a boil.
  4. 4. Reduce heat and let it simmer on low for 15 minutes.
  5. 5. Meanwhile, cook the linguini in salted water according to package directions, then drain.
  6. 6. Toss the cooked pasta with the sauce and Pecorino cheese, cooking and stirring on low for about 2 minutes.
  7. 7. Finish with chopped parsley and serve with extra cheese if desired.
