Baked Penne Pasta with Italian Sausage

Ingredients

The pasta

  • 1 lb Penne pasta
  • ½ cup Ricotta cheese
  • 1 cup Mozzarella cheese

The sauce and vegetables

  • 2 tbsp Olive oil
  • 2 cloves Garlic
  • 1 medium Onion
  • 1 tsp Fennel seed
  • ¼ tsp Crushed red pepper
  • ¼ cup Basil, chopped
  • 1 cup Roasted peppers
  • 2 cups Marinara sauce

The protein

  • 1 lb Italian sausage

Instructions

  1. Preheat the oven to 350°F.
  2. Spray a baking dish with cooking spray and spread marinara sauce on the bottom.
  3. In a skillet, heat olive oil and sauté onion, garlic, fennel seed, crushed red pepper, basil, and roasted peppers until tender.
  4. Add sausage chunks to the skillet and cook for a few minutes.
  5. In a bowl, mix cooked pasta with marinara sauce and the pepper/sausage mixture.
  6. Transfer the pasta mixture into the baking dish.
  7. Drop spoonfuls of ricotta cheese into the pasta and mix slightly.
  8. Sprinkle mozzarella cheese on top and mix a little.
  9. Cover with more mozzarella and fresh basil.
  10. Bake for about 20 minutes or until bubbly.
