Baked Penne Pasta with Italian Sausage

Instructions
- Preheat the oven to 350°F.
- Spray a baking dish with cooking spray and spread marinara sauce on the bottom.
- In a skillet, heat olive oil and sauté onion, garlic, fennel seed, crushed red pepper, basil, and roasted peppers until tender.
- Add sausage chunks to the skillet and cook for a few minutes.
- In a bowl, mix cooked pasta with marinara sauce and the pepper/sausage mixture.
- Transfer the pasta mixture into the baking dish.
- Drop spoonfuls of ricotta cheese into the pasta and mix slightly.
- Sprinkle mozzarella cheese on top and mix a little.
- Cover with more mozzarella and fresh basil.
- Bake for about 20 minutes or until bubbly.
