Ingredients

  • 2 teaspoons olive oil
  • 1 lb mild Italian sausage
  • ½ cup onion, finely diced
  • ¾ cup mini pepperoni
  • 1 teaspoon minced garlic
  • 24 ounces marinara sauce
  • cups water
  • to taste salt
  • to taste black pepper
  • 12 ounces short pasta (such as rotini or penne)
  • cups shredded mozzarella cheese
  • 1 tablespoon chopped parsley

Instructions

  1. Heat the olive oil in a large, deep pan over medium heat.
  2. Add the sausage and cook for 4-5 minutes, breaking it up until browned.
  3. Add the onion and cook for 3-4 minutes until translucent.
  4. Stir in ½ cup of pepperoni and garlic, cooking for 1 minute.
  5. Pour in the marinara sauce, water, salt, pepper, and pasta, then bring to a simmer.
  6. Cover and cook over low heat for 12-14 minutes until the pasta is tender.
  7. Preheat the oven to 400 degrees F.
  8. After cooking, sprinkle cheese on top and arrange the remaining pepperoni.
  9. Bake for 4-5 minutes until the cheese is melted.
  10. Sprinkle with parsley and serve.
