Ingredients

The sauce

  • 2 teaspoons olive oil
  • 2 pounds mild Italian sausage
  • ½ cup onion, finely chopped
  • 2 teaspoons garlic, minced
  • 24 ounces marinara sauce
  • 8 ounces tomato sauce

For assembly

  • 16 ounces rigatoni or other short pasta
  • 2 cups mozzarella cheese, shredded
  • 2 tablespoons fresh parsley, chopped
  • 1 spray cooking spray

Instructions

  1. Preheat the oven to 350°F and coat a 9x13 pan with cooking spray.
  2. Heat olive oil in a large pan over medium-high heat and cook the sausage for 3-4 minutes, breaking it up.
  3. Add onion and cook for another 5 minutes until the sausage is browned and the onion is softened.
  4. Stir in garlic and cook for 30 seconds, then add marinara and tomato sauce, bringing it to a simmer.
  5. Let the sauce simmer for 5 minutes until slightly thickened.
  6. Toss the cooked pasta with the sauce and pour into the prepared baking dish.
  7. Top with mozzarella cheese and bake covered for 20 minutes.
  8. Uncover and bake for an additional 15-20 minutes until bubbly and cheese is melted.
  9. Sprinkle with fresh parsley, let stand for 5 minutes, then serve.
