Baked Rigatoni Pasta

Ingredients

For the sauce

  • 2 teaspoons olive oil
  • 1 pound ground beef
  • 1 pound mild Italian sausage
  • ½ cup onion, finely chopped
  • 2 teaspoons garlic, minced
  • 24 ounces marinara sauce
  • 8 ounces tomato sauce
  • to taste salt
  • to taste pepper

For assembly

  • 16 ounces rigatoni pasta
  • 2 cups mozzarella cheese, shredded
  • 2 tablespoons chopped parsley
  • as needed cooking spray

Instructions

  1. 1. Preheat the oven to 350°F and coat a 9"x13" pan with cooking spray.
  2. 2. Heat olive oil in a large pan over medium-high heat.
  3. 3. Add ground beef and Italian sausage, season with salt and pepper, and cook until browned.
  4. 4. Add chopped onion and cook until softened.
  5. 5. Stir in minced garlic and cook for 30 seconds.
  6. 6. Add marinara and tomato sauces, bring to a simmer, and let thicken for 5 minutes.
  7. 7. Toss the cooked rigatoni with the sauce.
  8. 8. Pour the mixture into the prepared pan and top with shredded mozzarella cheese.
  9. 9. Bake covered for 20 minutes, then uncover and bake for an additional 15-20 minutes until bubbly and cheese is melted.
  10. 10. Sprinkle with parsley, let stand for 5 minutes, then serve.
