Cheesy Baked Rigatoni with Beef

Ingredients

The pasta

  • 1 lb rigatoni pasta

The meat

  • 13 oz beef sausage
  • 1 lb ground beef

The sauce

  • 2 tbsp olive oil
  • 1 cup white onion, chopped
  • 2 tbsp minced garlic
  • 1 tsp pink sea salt
  • 1 ½ tsp black pepper, divided
  • ½ tsp garlic powder
  • 1 tsp dried thyme, divided
  • ¼ tsp red pepper flakes
  • 15 oz fired-roasted diced tomatoes
  • 8 oz tomato sauce
  • 1 ½ tbsp sugar
  • ¼ cup fresh basil, finely chopped
  • 1 tbsp fresh rosemary, finely chopped

The cheese

  • 2 cups mozzarella cheese
  • 4 cups 4-cheese pizzeria cheese

Instructions

  1. Heat olive oil in a large pan and cook chopped onions until translucent.
  2. Add sliced beef sausage and cook for 5 more minutes.
  3. Stir in ground beef, minced garlic, sea salt, black pepper, garlic powder, dried thyme, and red pepper flakes; cook until beef is browned.
  4. Add diced tomatoes, tomato sauce, sugar, basil, rosemary, remaining thyme, and remaining black pepper; stir and cook for 10 minutes on medium-low heat.
  5. Cook rigatoni pasta according to package instructions, drain, and place in a large bowl.
  6. Combine the meat sauce with the rigatoni and fold together, then transfer to a casserole dish.
  7. Top with mozzarella and 4-cheese pizzeria cheese.
  8. Cover with foil and bake for 15 minutes at 375°F, then remove foil and bake for an additional 10 minutes.
