Ingredients

The sauce

  • 10 cloves garlic
  • 4 sprigs fresh basil
  • 2 28-oz. cans crushed tomatoes
  • ½ cup unsalted butter
  • 1 Tbsp. kosher salt
  • 2 tsp. kosher salt
  • 1 tsp. sugar
  • ½ tsp. crushed red pepper flakes
  • 12 oz. hot Italian sausage

The pasta

  • 1 lb. rigatoni

The cheese

  • 1 lb. low-moisture mozzarella cheese

Instructions

  1. Preheat the oven to 350°F and combine garlic, basil, crushed tomatoes, butter, salt, sugar, and red pepper flakes in a baking dish.
  2. Add the sausage, breaking it into pieces, and mix well. Bake uncovered for 45 minutes.
  3. Stir in rigatoni and water, cover tightly with foil, and bake until pasta is very al dente, about 23-27 minutes.
  4. Remove from oven, uncover, and stir well. Top with mozzarella cheese and broil until melted and browned, about 5-8 minutes.
  5. Serve topped with basil leaves.
