Italian Sausage Spinach Pasta Bake

Ingredients

The pasta and sauce

  • 16 oz whole wheat pasta
  • 1 lb Italian turkey sausage links
  • 1 medium onion, chopped
  • 5 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 14.5 oz can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ¼ teaspoon black pepper

The vegetables and cheese

  • 10 oz package frozen chopped spinach
  • ½ cup fat free half-and-half cream
  • 1 cup reduced fat shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. 1. Preheat the oven to 350°F and lightly coat a 9x13 baking dish with cooking spray.
  2. 2. Cook the pasta according to the package directions, then drain and set aside.
  3. 3. In a large sauté pan, cook the sausage and onion over medium heat, breaking up the sausage until browned.
  4. 4. Add minced garlic and cook for an additional minute.
  5. 5. Stir in the crushed and diced tomatoes, basil, oregano, and black pepper, then bring to a boil.
  6. 6. Reduce heat and simmer for 10 minutes.
  7. 7. Add the cooked pasta, spinach, and half-and-half to the sausage mixture and stir to combine.
  8. 8. Heat through, then pour into the prepared baking dish.
  9. 9. Sprinkle mozzarella and Parmesan cheese evenly over the top.
  10. 10. Bake uncovered for 25-30 minutes.
