Spinach and Sausage Oven Baked Spaghetti

Ingredients

  • 4 pieces hot Italian sausages, casing removed
  • 1 piece onion, diced
  • 3 cloves garlic, crushed
  • 2 tablespoons dried basil
  • 3 pieces bay leaves
  • 2 cups sliced mushrooms
  • 1 can diced tomatoes
  • ½ can tomato paste
  • ½ cup water
  • ½ teaspoon black pepper
  • 4 cups fresh baby spinach
  • 240 grams whole wheat spaghetti
  • 120 grams grated mozzarella

Instructions

  1. 1. Preheat the oven to 375°F.
  2. 2. In a large saucepan, cook the sausage meat over medium heat for about 5 minutes until it loses its pink color.
  3. 3. Remove excess fat and add mushrooms, onion, garlic, basil, and pepper; cook for another 5 minutes until the liquid evaporates.
  4. 4. Add tomatoes, water, and tomato paste; bring to a boil, then lower the heat and simmer for 15 minutes until almost all liquid has evaporated.
  5. 5. Stir in the spinach.
  6. 6. Meanwhile, bring salted water to a boil and cook spaghetti until slightly undercooked; drain well and add to the sauce, stirring to coat.
  7. 7. Transfer the mixture to a baking dish and sprinkle cheese on top.
  8. 8. Bake for 20 minutes, then switch to broil for 2-3 minutes until the cheese bubbles and turns golden.
  9. 9. Serve immediately.
