Sheet Pan Sausage and Veggies

Instructions
- 1. Preheat the oven to 375°F.
- 2. In a large bowl, combine the potatoes and onions with 1 tablespoon of olive oil, salt, and pepper.
- 3. Spread the potato and onion mixture on a large sheet pan and roast for 25 minutes, stirring occasionally.
- 4. After 25 minutes, add the sliced sausage to the pan and roast for an additional 10 minutes, stirring occasionally.
- 5. Once the potatoes are tender and the sausage is cooked, drizzle the kale with the remaining olive oil and add it to the pan.
- 6. Stir gently and cook for another 5 minutes until the kale is wilted.
- 7. Remove from the oven and adjust seasoning with additional salt if desired. Serve warm.
