Ingredients

The main ingredients

  • 1 lb Italian sausage
  • lbs red potatoes
  • 1 medium onion
  • 4 cups chopped kale

The seasonings and oil

  • 2 tbs olive oil
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. 1. Preheat the oven to 375°F.
  2. 2. In a large bowl, combine the potatoes and onions with 1 tablespoon of olive oil, salt, and pepper.
  3. 3. Spread the potato and onion mixture on a large sheet pan and roast for 25 minutes, stirring occasionally.
  4. 4. After 25 minutes, add the sliced sausage to the pan and roast for an additional 10 minutes, stirring occasionally.
  5. 5. Once the potatoes are tender and the sausage is cooked, drizzle the kale with the remaining olive oil and add it to the pan.
  6. 6. Stir gently and cook for another 5 minutes until the kale is wilted.
  7. 7. Remove from the oven and adjust seasoning with additional salt if desired. Serve warm.
