Sausage and Peppers with Zucchini Noodles

Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat and add the sausages, covering the pan.
- Cook for about 7 minutes until browned, then uncover and cook for another 5 minutes, turning until browned on the outside.
- Transfer the sausages to a cutting board and slice into 1-inch pieces.
- Add the remaining olive oil, onion noodles, and bell pepper noodles to the skillet and cook for about 5 minutes until softened.
- Stir in the tomato paste, red pepper flakes, and minced garlic, cooking for 30 seconds until fragrant.
- Return the sausage to the pan, add oregano and broth, and season with salt and pepper.
- Cover and simmer until the sausage is cooked through, about 10 minutes.
- Uncover and simmer until the sauce reduces by a quarter, about 5 minutes more.
- Stir in parsley and transfer to a serving platter, adding zucchini noodles and tossing until combined.
- Serve immediately.
