Ingredients

The pasta

  • 12 ounces linguine

The sauce

  • 2 medium zucchini
  • 1 medium red onion
  • 4-6 cloves garlic
  • 2 whole lemons
  • 16-18 ounces sweet Italian sausage
  • 2 cans diced tomatoes
  • 2 teaspoons dry thyme
  • ¼-½ teaspoon red pepper flakes
  • Parmesan cheese to taste for serving

Instructions

  1. 1. Bring a large pot of salted water to a boil.
  2. 2. Prepare the vegetables by washing them, cutting the zucchini, slicing the onion, and mincing the garlic.
  3. 3. Once the water is boiling, add the linguine and cook until al dente, then drain and toss with olive oil.
  4. 4. In a skillet, heat olive oil and cook the crumbled sausage until browned.
  5. 5. Remove the sausage and sauté the onions and zucchini in the same skillet until tender.
  6. 6. Add garlic, thyme, and red pepper flakes, cooking for an additional minute.
  7. 7. Return the sausage to the skillet, add diced tomatoes, and simmer for 5-10 minutes.
  8. 8. Combine the sauce with the cooked pasta, add lemon juice, and season to taste.
  9. 9. Serve with Parmesan cheese and lemon wedges.
