Instructions
- 1. Bring a large pot of salted water to a boil.
- 2. Prepare the vegetables by washing them, cutting the zucchini, slicing the onion, and mincing the garlic.
- 3. Once the water is boiling, add the linguine and cook until al dente, then drain and toss with olive oil.
- 4. In a skillet, heat olive oil and cook the crumbled sausage until browned.
- 5. Remove the sausage and sauté the onions and zucchini in the same skillet until tender.
- 6. Add garlic, thyme, and red pepper flakes, cooking for an additional minute.
- 7. Return the sausage to the skillet, add diced tomatoes, and simmer for 5-10 minutes.
- 8. Combine the sauce with the cooked pasta, add lemon juice, and season to taste.
- 9. Serve with Parmesan cheese and lemon wedges.
