Italian Chicken Sausage Quinoa Casserole

Ingredients

The casserole

  • 1 cup uncooked quinoa
  • 2 cups chicken broth
  • 2 cups chopped kale
  • ½ cup julienne-cut sun-dried tomatoes
  • ¼ large red onion
  • 1 tablespoon olive oil
  • teaspoon salt
  • teaspoon ground pepper
  • 1 teaspoon garlic powder
  • 5 pieces fully-cooked chicken sausages

Optional toppings

  • to taste fresh basil
  • to taste parmesan cheese

Instructions

  1. Preheat the oven to 375ºF and spray a large casserole dish with nonstick cooking spray.
  2. Place quinoa and chicken broth at the bottom of the casserole dish.
  3. Prepare the kale by de-stalking and chopping it into bite-sized pieces, then add to the dish.
  4. Add the sun-dried tomatoes and diced red onion to the casserole dish.
  5. Season with salt, pepper, and garlic powder, then drizzle with olive oil.
  6. Mix everything in the casserole dish to ensure even distribution and press down the veggies into the liquid.
  7. Slice the chicken sausages and spread them evenly on top of the casserole.
  8. Cover the dish with tin foil and bake for 30 minutes, then uncover and bake for an additional 20 minutes until the quinoa is fully cooked.
  9. Let cool for 5-10 minutes before serving with fresh basil and parmesan cheese.
