Instructions
- Preheat the oven to 375ºF and spray a large casserole dish with nonstick cooking spray.
- Place quinoa and chicken broth at the bottom of the casserole dish.
- Prepare the kale by de-stalking and chopping it into bite-sized pieces, then add to the dish.
- Add the sun-dried tomatoes and diced red onion to the casserole dish.
- Season with salt, pepper, and garlic powder, then drizzle with olive oil.
- Mix everything in the casserole dish to ensure even distribution and press down the veggies into the liquid.
- Slice the chicken sausages and spread them evenly on top of the casserole.
- Cover the dish with tin foil and bake for 30 minutes, then uncover and bake for an additional 20 minutes until the quinoa is fully cooked.
- Let cool for 5-10 minutes before serving with fresh basil and parmesan cheese.
