Chicken Apple Sausage Quinoa Casserole

The dressing

maple syrup

balsamic vinegar

apple cider vinegar

Instructions
- Preheat the oven to 375ºF and spray a 9x13 casserole dish with olive oil cooking spray.
- Prep the vegetables by peeling and dicing sweet potatoes, chopping onion, and shredding brussels sprouts. Place the veggies in the casserole dish and add olive oil, spices, salt, and pepper. Toss until fully coated.
- Add quinoa, broth, and vinegar to the casserole dish and mix well.
- Cover the casserole dish with tin foil and bake for 40 minutes.
- While baking, prepare the dressing by adding all dressing ingredients into a jar, closing it tightly, and shaking to mix.
- After 40 minutes, remove the casserole from the oven and place sliced chicken sausage on top. Turn the oven to broil and broil for 2-4 minutes, watching closely.
- Remove from the oven, add the dressing, mix well, and serve.
