Ingredients

The casserole

  • 1 lb Italian sausage links
  • 6 cups cauliflower rice
  • 2 pieces bell peppers, sliced into strips
  • 1 tbsp ghee or coconut oil

The sauce

  • 1 cup water
  • 1 piece lemon, juice of
  • 2 cups raw whole cashews
  • 2 tbsp nutritional yeast
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp thyme
  • ½ tsp sea salt
  • ½ tsp pepper
  • ¼ tsp cayenne pepper

Instructions

  1. Make the sauce by blending all sauce ingredients until smooth and creamy.
  2. Preheat the oven to 400°F and grease a 9x13 baking dish with ghee.
  3. Prepare the cauliflower rice and chop the bell peppers.
  4. Place cauliflower rice and bell peppers in the baking dish and mix.
  5. Pour the sauce over the vegetables and mix to incorporate.
  6. Nestle the sausage links into the dish with the veggies.
  7. Bake in the oven for 35-45 minutes, or until the sausage is cooked through.
  8. Allow to cool for at least 5 minutes before serving.
