Ingredients

The Chicken

  • 4 pieces chicken thighs
  • 1 scant teaspoon salt
  • 1 scant teaspoon pepper
  • 1–2 tablespoons olive oil

The Vegetables and Herbs

  • 1 piece onion, diced
  • 4 cloves garlic, rough chopped
  • 1 tablespoon fresh thyme
  • 2 cups fresh spinach, chopped
  • 1 ½ cups artichoke hearts, drained
  • 4–6 sprigs thyme for garnish

The Pasta and Sauce

  • 1 cup orzo pasta
  • 2 ½ cups chicken broth
  • 2 teaspoons dijon mustard
  • ¼ cup sour cream
  • ¼–½ teaspoon salt
  • zest of 1 lemon

Instructions

  1. Preheat the oven to 400°F.
  2. Season the chicken with salt and pepper, then sear in a skillet until golden and crispy; set aside.
  3. In the same skillet, sauté onion, garlic, and thyme, then add orzo and toast briefly.
  4. Pour in chicken broth, add salt and mustard, cover, and simmer until orzo is al dente.
  5. Stir in sour cream, spinach, and artichokes, adjusting the consistency with more broth if needed.
  6. Nestle the chicken back into the mixture and bake uncovered until the chicken is cooked through.
  7. Garnish with lemon zest before serving.
