Creamy Orzo

Instructions
- Heat butter in a skillet over medium-high heat and add onions and mushrooms, cooking until tender.
- Season with salt and pepper, then add garlic and Italian seasoning, cooking for about a minute before removing from heat.
- Add remaining butter to the skillet, and once melted, stir in orzo for about 1-2 minutes.
- Pour in half and half and chicken broth, bring to a boil, then reduce heat to medium/low, cover, and cook for 5-6 minutes until orzo is tender.
- Return the mushroom mixture to the skillet with parmesan cheese, mix well, and add spinach.
- Remove from heat, adjust seasonings, and serve immediately.
