Parmesan Portobello Orzo

Ingredients

The base

  • 2 Tbsp olive oil
  • 2 cloves garlic
  • 8 oz baby portobello mushrooms
  • 2 cups uncooked orzo
  • 3 cups chicken broth

Seasoning

  • 1 pinch salt
  • 1 pinch pepper

Finishing touch

  • cup grated Parmesan

Instructions

  1. Rinse and slice the mushrooms.
  2. Mince the garlic and sauté it in olive oil until fragrant.
  3. Add the mushrooms, salt, and pepper, and sauté until softened.
  4. Stir in the uncooked orzo and chicken broth, then bring to a boil.
  5. Cover and reduce heat to low, simmering for 10 minutes while stirring halfway through.
  6. Check if the orzo is tender, and let it absorb any remaining broth.
  7. Remove from heat, stir in the Parmesan, and serve.
