Spinach and Parmesan Orzo

Ingredients

  • 1 tablespoon light butter
  • 1 cup dry whole wheat orzo
  • 2 cloves garlic, minced
  • 2 cups fat free chicken broth or vegetable broth
  • 4 oz fresh chopped spinach
  • 1 ½ oz freshly grated Parmesan
  • ½ teaspoon dried basil
  • ½ teaspoon Italian seasoning
  • to taste freshly ground black pepper

Instructions

  1. Melt the butter in a large skillet over medium-high heat.
  2. Add the dry orzo and stir to coat, cooking for about 2 minutes until some orzo pieces begin to brown.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Pour in the broth and bring to a boil, then cover and reduce heat to a simmer.
  5. Simmer for about 14-15 minutes until the broth is absorbed and the orzo is tender.
  6. Stir in the chopped spinach and cook for 1-2 minutes until wilted.
  7. Add the Parmesan, basil, Italian seasoning, and black pepper, stirring until combined.
  8. Serve immediately.
