Cajun Chicken Orzo with Spinach

Instructions
- Heat olive oil in a non-stick pan over medium heat and add shallots, green bell pepper, chopped tomato, and Cajun seasoning. Cook until vegetables are softened.
- Stir in garlic, tomato paste, crushed red pepper, and two tablespoons of chicken broth, cooking for two minutes.
- Add dry orzo and cook for one minute.
- Pour in the remaining chicken broth and a pinch of salt, then increase heat to medium-high. Cook until orzo is al dente, about 7-8 minutes.
- Reduce heat to low and stir in spinach until wilted, about 2-3 minutes.
- Add chicken, parmesan, and lemon juice, then season with salt and pepper to taste.
