Cajun Chicken Orzo with Spinach

Ingredients

  • 1 tbsp Olive Oil
  • 1 small Shallot, finely chopped
  • ½ cup Green Bell Pepper, chopped
  • 1 unit Roma Tomato, chopped
  • 1 tbsp Cajun Seasoning
  • 2 cloves Garlic, minced
  • 1 tbsp Tomato Paste
  • ½ tsp Crushed Red Pepper (optional)
  • 1 cup Chicken Broth
  • ½ cup Dry Orzo
  • 2 cups Baby Spinach, packed
  • cups Shredded or Chopped Chicken
  • 2 tbsp Grated Parmesan Cheese
  • 1 tbsp Lemon Juice (fresh)
  • to taste Salt + Pepper

Instructions

  1. Heat olive oil in a non-stick pan over medium heat and add shallots, green bell pepper, chopped tomato, and Cajun seasoning. Cook until vegetables are softened.
  2. Stir in garlic, tomato paste, crushed red pepper, and two tablespoons of chicken broth, cooking for two minutes.
  3. Add dry orzo and cook for one minute.
  4. Pour in the remaining chicken broth and a pinch of salt, then increase heat to medium-high. Cook until orzo is al dente, about 7-8 minutes.
  5. Reduce heat to low and stir in spinach until wilted, about 2-3 minutes.
  6. Add chicken, parmesan, and lemon juice, then season with salt and pepper to taste.
