Lemon Chicken Orzo Soup

Instructions
- Pound the chicken to about ½-inch thickness and season with salt and pepper.
- Sear the chicken in a pot until browned on both sides, then transfer to a plate.
- Sauté the carrots, celery, and onion until nearly softened, then add garlic and sauté for another minute.
- Pour in the chicken broth, add the parmesan rind and seasonings, then return the chicken to the pot and bring to a simmer.
- Add the orzo and simmer until the chicken is cooked through and the pasta is tender.
- Remove the parmesan rind and chicken, dice the chicken, and return it to the soup along with lemon juice, lemon zest, and spinach.
