Lemon Chicken Orzo Soup

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • to taste salt and freshly ground black pepper
  • 2 Tbsp olive oil
  • cups chopped carrots
  • cups chopped celery
  • cups chopped yellow onion
  • 5 cloves garlic, minced
  • 7 cups chicken broth
  • 1 piece parmesan rind
  • tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp dried thyme
  • ½ tsp dried rosemary
  • 1 cup dried orzo pasta
  • tsp lemon zest
  • ¼ cup fresh lemon juice
  • 5 oz fresh spinach, roughly chopped

Instructions

  1. Pound the chicken to about ½-inch thickness and season with salt and pepper.
  2. Sear the chicken in a pot until browned on both sides, then transfer to a plate.
  3. Sauté the carrots, celery, and onion until nearly softened, then add garlic and sauté for another minute.
  4. Pour in the chicken broth, add the parmesan rind and seasonings, then return the chicken to the pot and bring to a simmer.
  5. Add the orzo and simmer until the chicken is cooked through and the pasta is tender.
  6. Remove the parmesan rind and chicken, dice the chicken, and return it to the soup along with lemon juice, lemon zest, and spinach.
