  • 1 cup dry orzo

Instructions

  1. Heat olive oil in a large pot over medium-high heat and brown the chicken with seasonings.
  2. Remove chicken and set aside, leaving drippings in the pot.
  3. Add onions, carrots, celery, and garlic to the pot and cook until translucent.
  4. Sprinkle flour into the pot and stir to combine.
  5. Gradually whisk in chicken broth, lemon juice, and lemon zest, ensuring no lumps.
  6. Bring to a boil and return the cooked chicken to the pot, then cover and simmer for 15 minutes.
  7. Remove the lid and add orzo, cooking on low heat until al dente.
  8. Taste and adjust seasonings before serving.
