Instructions
- Heat olive oil in a large pot over medium-high heat and brown the chicken with seasonings.
- Remove chicken and set aside, leaving drippings in the pot.
- Add onions, carrots, celery, and garlic to the pot and cook until translucent.
- Sprinkle flour into the pot and stir to combine.
- Gradually whisk in chicken broth, lemon juice, and lemon zest, ensuring no lumps.
- Bring to a boil and return the cooked chicken to the pot, then cover and simmer for 15 minutes.
- Remove the lid and add orzo, cooking on low heat until al dente.
- Taste and adjust seasonings before serving.
