Ingredients

  • 1 tablespoon olive oil
  • ½ unit onion (minced)
  • 5 units carrots (peeled, trimmed, and diced)
  • 3 cloves garlic (minced)
  • ¼ teaspoon crushed red pepper
  • 6 cups chicken stock/broth
  • ¾ cup whole-wheat orzo pasta (uncooked)
  • 3 cups shredded/chopped cooked chicken
  • 3 cups fresh spinach leaves (chopped)
  • ¼ cup heavy cream
  • 1 unit lemon (juiced)
  • 1 teaspoon salt
  • 2 tablespoons fresh dill (chopped)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Cook onion and carrots until softened, stirring for 3 to 5 minutes.
  3. Add garlic and crushed red pepper, cooking for another minute.
  4. Pour in chicken stock and bring to a boil.
  5. Add orzo and cook until al dente, about 6 minutes.
  6. Stir in chicken, spinach, cream, lemon juice, salt, and dill, simmering until heated through.
  7. Ladle into bowls and serve.
