Lemon Chicken Orzo Soup

Instructions
- Prepare the veggies as needed.
- Heat avocado oil in a large dutch oven or sauce pan.
- Add onions, carrots, and celery to the pan and cook for 5 minutes until softened.
- Add garlic, salt, pepper, and thyme, and cook for another 3 minutes.
- Pour in chicken broth and lemon juice, cover, and bring to a boil.
- Once boiling, add orzo and cooked chicken, then let simmer for 15-20 minutes, stirring occasionally.
- Turn off the heat and add spinach; the soup will thicken as it sits.
