Lemon Orzo

Instructions
- Heat 1 Tbsp olive oil in a medium saucepan over medium-low heat and sauté the garlic until fragrant.
- Add the chicken broth and bring to a boil over medium-high heat.
- Stir in the orzo, ¾ tsp lemon zest, and salt, then reduce heat to medium-low.
- Let the mixture simmer until the orzo is tender, about 10 minutes, adding more broth if it becomes dry.
- Remove from heat and stir in lemon juice, the remaining olive oil, lemon zest, parmesan, and pepper.
- Garnish with parsley if desired.
