Ingredients

The base

  • 8 oz dry orzo pasta
  • 2 ⅔ cups low-sodium chicken broth
  • 2 Tbsp olive oil
  • 2 tsp minced fresh garlic
  • 1 ½ tsp lemon zest
  • 1 Tbsp lemon juice
  • cup finely shredded parmesan cheese
  • ½ tsp ground black pepper
  • Salt to taste salt

Garnish

  • 1 Tbsp minced fresh parsley (optional)

Instructions

  1. Heat 1 Tbsp olive oil in a medium saucepan over medium-low heat and sauté the garlic until fragrant.
  2. Add the chicken broth and bring to a boil over medium-high heat.
  3. Stir in the orzo, ¾ tsp lemon zest, and salt, then reduce heat to medium-low.
  4. Let the mixture simmer until the orzo is tender, about 10 minutes, adding more broth if it becomes dry.
  5. Remove from heat and stir in lemon juice, the remaining olive oil, lemon zest, parmesan, and pepper.
  6. Garnish with parsley if desired.
