Chicken and Broccoli Orzo

Ingredients

The pasta

  • 8 ounces orzo
  • 12 ounces broccoli florets

The sauce

  • 2 tablespoons butter
  • 2 cloves garlic
  • ¼ cup heavy cream, half and half, or milk
  • ½ cup shredded Parmesan cheese

The protein

  • 2 cups warm cooked chicken

Seasoning

  • to taste salt
  • to taste pepper

Instructions

  1. Bring a pot of salted water to a boil and cook the orzo according to package instructions, adding broccoli in the last 3 minutes.
  2. Remove the broccoli with a slotted spoon and drain the orzo.
  3. In a skillet, melt the butter and cook the garlic until golden.
  4. Add the drained orzo, cream, and Parmesan cheese to the skillet, seasoning with salt and pepper.
  5. Stir in the cooked chicken and gently fold in the broccoli.
  6. Serve topped with additional Parmesan cheese if desired.
