Cheddar Broccoli Orzo

Ingredients

The base

  • 6 oz dry whole wheat orzo
  • 2 cups fat free reduced sodium chicken broth
  • ¼ cup water

The vegetables

  • 4 oz finely chopped fresh broccoli florets
  • 2 cloves garlic, minced

The flavorings

  • 1 tbsp light butter
  • ¼ tsp dry mustard powder
  • 1 tsp chopped fresh parsley
  • ¼ tsp salt
  • to taste freshly ground black pepper

The cheese

  • 2 oz 50% reduced fat sharp cheddar, shredded

Instructions

  1. Melt the butter in a large skillet over medium-high heat.
  2. Add the dry orzo and stir to coat, cooking until some pieces begin to brown.
  3. Stir in the minced garlic and cook until fragrant.
  4. Add the broth and water, bringing to a boil, then cover and reduce heat to a simmer.
  5. After 5 minutes, stir in the broccoli, cover, and simmer for an additional 8-10 minutes until the orzo and broccoli are tender.
  6. Remove from heat and stir in the cheddar, mustard powder, parsley, salt, and black pepper until combined.
  7. Serve immediately.
