Broccoli Cheddar Orzotto

Ingredients

The base

  • 1 head broccoli
  • 1 cup orzo
  • 2 cups whole milk

The fats

  • 3 Tbsp. unsalted butter
  • 2 Tbsp. extra-virgin olive oil

The flavorings

  • 2 cloves garlic
  • 8 oz. sharp yellow cheddar
  • ΒΌ tsp. crushed red pepper flakes
  • 1 tsp. kosher salt
  • to taste freshly ground black pepper

Instructions

  1. Separate the florets from the stem of the broccoli and chop the stem and remaining florets.
  2. In a skillet, melt butter and olive oil, then add garlic and cook until fragrant.
  3. Stir in orzo and chopped broccoli, cooking until the orzo is toasted.
  4. Add milk and water, cooking until the liquid is mostly absorbed and the orzo is tender.
  5. Remove from heat and stir in grated cheddar until melted.
  6. Broil the reserved broccoli florets with olive oil, red pepper flakes, salt, and pepper until charred.
  7. For baby portions, scoop out orzotto and season the remaining with salt and pepper before serving.
