Broccoli Cheddar Orzotto

Instructions
- Separate the florets from the stem of the broccoli and chop the stem and remaining florets.
- In a skillet, melt butter and olive oil, then add garlic and cook until fragrant.
- Stir in orzo and chopped broccoli, cooking until the orzo is toasted.
- Add milk and water, cooking until the liquid is mostly absorbed and the orzo is tender.
- Remove from heat and stir in grated cheddar until melted.
- Broil the reserved broccoli florets with olive oil, red pepper flakes, salt, and pepper until charred.
- For baby portions, scoop out orzotto and season the remaining with salt and pepper before serving.
