One-Skillet Broccoli Chicken Orzo

Ingredients

  • 2–4 pieces chicken breasts (8–10 ounces each)
  • 2 tablespoons olive oil, divided
  • 6 cloves garlic, minced
  • ⅛–½ teaspoon red pepper flakes
  • ½ pound broccoli, chopped small
  • 1 cup orzo pasta, uncooked
  • 2 teaspoons lemon zest (about 1 lemon's worth)
  • 1 tablespoon lemon juice
  • ½ teaspoon salt, adjust to taste
  • ¼ teaspoon black pepper
  • ½ cup crumbled feta cheese
  • 2 cups chicken broth, heated
  • 6 pieces thin lemon slices
  • to taste fresh dill for garnish

Instructions

  1. Preheat the oven to 375°F.
  2. Sear the chicken in a preheated cast-iron skillet with 1 teaspoon of olive oil for 5 minutes on each side until golden.
  3. Remove the chicken from the pan and set aside.
  4. In the same pan, sauté the minced garlic, remaining olive oil, and chili flakes for 1-2 minutes over medium heat.
  5. Add the chopped broccoli and stir for about a minute, then remove from heat.
  6. Stir in the uncooked orzo, lemon zest, lemon juice, salt, pepper, and feta into the broccoli mixture.
  7. Pour hot chicken broth over the mixture and place the seared chicken breasts on top.
  8. Cover the pan with foil and bake for 20-25 minutes, ensuring the chicken reaches an internal temperature of 165°F.
  9. Garnish with fresh dill, feta cheese, and lemon slices before serving.
