Brussels Sprouts Sausage Pasta

Ingredients

The pasta

  • ½ pound orecchiette pasta

The sauce

  • 6 tablespoons olive oil
  • 1 pound spicy ground Italian sausage
  • 2 cups Brussels sprouts, thinly sliced
  • 2 cups spinach leaves
  • 3-4 cloves garlic, minced
  • 2 tablespoons dried oregano leaves
  • 1 teaspoon coarse salt
  • ½ teaspoon ground black pepper
  • ¼-½ teaspoon crushed red pepper flakes
  • ½ cup freshly grated or shaved Parmesan cheese

Instructions

  1. Chop and prepare all ingredients.
  2. Boil water in a large pot and cook the orecchiette according to package directions. Drain and set aside.
  3. In a large skillet, heat 3 tablespoons of olive oil over medium heat.
  4. Add the sausage and cook until slightly browned, about 3 minutes, breaking it up as it cooks.
  5. Stir in the Brussels sprouts and cook for 4-5 minutes.
  6. Add the spinach and cook for another 3-4 minutes until wilted and the sausage is fully cooked.
  7. Mix in the garlic, oregano, salt, pepper, and crushed red pepper flakes.
  8. Add the cooked orecchiette and the remaining olive oil, stirring well. Adjust seasoning to taste.
  9. Serve with freshly grated or shaved Parmesan cheese.
