Brussels Sprouts Sausage Pasta

Instructions
- Chop and prepare all ingredients.
- Boil water in a large pot and cook the orecchiette according to package directions. Drain and set aside.
- In a large skillet, heat 3 tablespoons of olive oil over medium heat.
- Add the sausage and cook until slightly browned, about 3 minutes, breaking it up as it cooks.
- Stir in the Brussels sprouts and cook for 4-5 minutes.
- Add the spinach and cook for another 3-4 minutes until wilted and the sausage is fully cooked.
- Mix in the garlic, oregano, salt, pepper, and crushed red pepper flakes.
- Add the cooked orecchiette and the remaining olive oil, stirring well. Adjust seasoning to taste.
- Serve with freshly grated or shaved Parmesan cheese.
